Baffone (means big mustache!) is a blend of Nascetta (a rare native Piemontese varietal with excellent skins for maceration) and Moscato Giallo (a super aromatic varietal) vinified dry. This unusual grape combo makes a delightful bubbly elixir, lightly orange and hazy with pretty flowers, salty pear and juicy yellow nectarine wrapped around a core of electric acidity. Super fun and easy for summer anytime sipping.

Viticulture
Fausto and Cinzia Cellario are 3rd generation winemakers in the village of Carru` on the western outskirts of the Langhe. The family believes in only working with local, indigenous Piemontese grape varieties and fiercely defends local winemaking traditions both in the vineyard work and the cellar practices. The Cellario vineyard holdings cover some 30 ha between 5 different vineyard sites covering the southern Langhe. With holdings in Novello and Monforte, the Dogliani plot is arguably the family’s most prestigious land and they are Dolcetto specialists. All the fermentation takes place with indigenous yeasts. Sulfur is only added in tiny quantities at bottling if necessary
Winemaking

Certified organic farming Marl and tuff soil, 350 meters altitude. 5 days in stainless steel before being bottled with conserved passito (late harvest) must to induce secondary fermentation. No sulfur added and no disgorgement; zero-zero; 11.5% ABV
Pet nat, meaning naturally sparkling. This technique was passed down to us by Tonio, "the mustachio," Cinzia's father, who, while producing a little wine for him, also made a sparkling wine.
Pet nat is the oldest system for making a naturally sparkling wine in the bottle. The wine is bottled during the waxing moon, with the addition of dried grape juice or natural residual sugar from the first fermentation, which triggers a second fermentation in the bottle. The result is a more persistent and long-lasting natural sparkling wine; since it is unfiltered, it retains its bubbles longer.
