Viticulture
The Nebbiolo grapes are exposed to the South and South-west and grow at an altitude of 320 to 360 meters above sea level. The grapes are hand-picked in October and transported in small baskets to the winery.
Winemaking
After transportation, the grapes are de-stemmed and lightly crushed. Fermentation of the alcohol takes place in vertical steel tanks. Maceration takes around 50 to 60 days with several pumpovers happening daily to ensure the extraction of tannins and colour. The wine is aged for 36 months in large casks. After the ageing the wine is bottled.
Tasting Note
A very elegant wine with immense power. On the nose it hints small red berries with sweet spices and liquorice. The palate is smooth and velvety with a sweetness to finish and tannins that linger.
Pairs excellently with steak and aged cheeses, as well as tagliatelle with sauce and eggs with truffle.
