Viticulture
The vineyards are located in the village of Milly, at the top of a 38% steep slope facing southeast, where the vines face the sun directly. The grapes are pruned using the Double Guyot method and harvested by machine.
Winemaking
After pressing, cold static setting is carried out for 12 hours. Fermentation occurs in temperature-regulated stainless-steel tanks with selected yeasts and no added enzymes. Malolactic fermentation is then proceeded to lower the wine's acidity. Thereafter, the wine is aged for 9 to 12 months in stainless steel tanks and after fining, the bottles are chilled.
Tasting Note
Round and well structured with extreme minerality.
Pairs well with roasted langoustines in saffron, chicken supreme with Époisses cheese or fillet of pikeperch in a beurre blanc sauce.
