Viticulture
2017 had higher than normal temperatures and exceptionally low rainfall for several months accelerated ripening. Then the storms at the beginning of August accompanied and prolonged the ripening process. The cool nights of the beautiful month of September favored the phenolic maturity giving very fragrant wines with great balance. 3 successive sortings carried out. Mobilizing 40 people over 15 days.
Winemaking
The wine fermented in thermo-regulated stainless steel vats. 50% whole clusters. Start of alcoholic fermentation thanks to indigenous yeasts to respect the land. During the 4 weeks of maceration, we encourage pumping over with punching down in order to extract the noblest tannins. The malolactic fermentation takes place in wood.
Tasting Note
The wine has a dark ruby colour. The nose opens with a heady expression where the refined outline of the fruit bows before the intensity of the bouquety, spicy and balsamic notes. The
palate combines power and energy. Its aromatic complexity is prolonged by silky and coated tannins.
